  • 1 cup rehydrated Sweet Corn
  • ½ cup rehydrated Bell Peppers
  • ¼ cup rehydrated Onion
  • ½ cup rehydrated Tomato Dices

Fresh Ingredients

  • 1 avocado, diced
  • Juice of 2 limes
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • 2 tablespoons fresh cilantro
  • Salt and black pepper to taste
  • Optional: crumbled cotija or feta cheese

Directions

Rehydrate the black beans, corn, peppers, onions, and tomatoes. Drain any excess water and allow the ingredients to cool before assembling the salad.

In a large bowl, combine the black beans, corn, bell peppers, onions, and tomatoes.

In a separate bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, pepper, and cilantro until well blended.

Pour the dressing over the vegetables and toss gently to coat every bite with the bright, citrusy dressing.
