For the cake:
- 1 ½ cups Harmony House Foods Black Beans, rehydrated and drained
- 3 large eggs
- ½ cup maple syrup or honey
- ⅓ cup coconut oil or neutral vegetable oil, melted
- ½ cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon espresso powder (optional, enhances chocolate flavor)
Optional chocolate frosting:
- ½ cup dark chocolate chips
- ¼ cup heavy cream or coconut cream

Prepare the black beans
Rehydrate Harmony House Foods Black Beans and drain well. -
Blend the batter
Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan.
Add all cake ingredients to a food processor or high-powered blender. Blend until completely smooth and silky - no bean texture should remain. -
Bake
Pour batter into prepared pan and smooth the top.
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out mostly clean. -
Cool
Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. -

Heat cream until just steaming, pour over chocolate chips, and let sit for 2 minutes. Stir until smooth and glossy, then spread over cooled cake.
