Ingredients

For the filling:

  • 1 cup Organic Pumpkin Dices
  • 1 cup water, for rehydrating the pumpkin
  • 1 cup Orchard Fruit Medley
  • 2 tablespoons maple syrup or brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • Pinch of salt

For the crisp topping:

  • ¾ cup old-fashioned rolled oats
  • ½ cup all-purpose flour
  • ⅓ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 5 tablespoons cold butter, cut into small pieces
  • ⅓ cup chopped pecans or walnuts, optional

Directions

  1. Rehydrate the pumpkin. Place the Organic Pumpkin Dices in a bowl and cover with the water. Let them rehydrate according to the package directions, then drain any excess liquid.

  2. Prepare the fruit. Place the Orchard Fruit Medley in a bowl and add enough water to soften the fruit. Let it sit for several minutes, then drain. You can reserve a little of the soaking liquid to add to the filling if desired.

  3. Make the filling. In a large bowl, combine the rehydrated pumpkin, fruit, maple syrup or brown sugar, cinnamon, pumpkin pie spice, ginger, vanilla, cornstarch, and salt.

  4. Make the topping. In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter with your fingers or a pastry cutter until the mixture resembles coarse crumbs. Stir in the nuts if using.

  5. Assemble. Spread the pumpkin-fruit mixture into a greased 8-inch square baking dish. Sprinkle the crisp topping evenly over the top.

  6. Bake. Bake at 350°F for about 35–40 minutes, or until the filling is bubbling and the topping is golden brown.

  7. Serve warm. Let the crisp cool for 10–15 minutes before serving. For the ultimate fall dessert, top it with vanilla ice cream, whipped cream, or a drizzle of maple syrup.
