This autumn-style Sweet Potato and Lentil Soup is perfect for a cozy Fall evening.  Plus, you only need some simple, easily stored ingredients, to make it!  Prepare to impress your guests with a quick delicious meal.

Step 1:  Gather your ingredients:  You will need dehydrated sweet potatoes, dried lentils, dried spinach flakes, dried onions, dehydrated carrots, dehydrated garlic, fresh thyme, water, vegetable broth, and sea salt (if desired). 

 Step 2:  Add all ingredients to a medium saucepan:  Measure out the ingredients and place them all in the pot prior to turning on the heat. Give the contents a slight stir to mix the ingredients together and to allow all the dehydrated vegetables to be immersed into the water and broth. 

Step 3: Bring contents to a boil:  Then, reduce to medium heat. Simmer for approximately 15-20 minutes. Remove from heat and allow soup to cool until desire serving temperature is reached.

Sweet Potato & Lentil Comfort Soup

2 Cups Water
2 Cups Vegetable Broth 
1/2 Cup Dehydrated Sweet Potatoes
¼  Cup Dried Lentils
2 Tablespoons Dried Spinach Flakes 
1 Tablespoon Dried Onions
1 Tablespoon Dehydrated Carrots
¼ Teaspoon Dehydrated Garlic
1 Teaspoon Fresh Thyme
Sea Salt to Taste 

Add all ingredients to a medium pot.  Bring contents to a boil and then reduce to medium heat.  Simmer for approximately 15-20 minutes.  Serve and enjoy!
