One-Pot Veggie Rice Bowl

Ingredients

  • 1 cup white or brown rice 
  • 1/4 cup dehydrated carrots 
  • 1/4 cup dehydrated peas 
  • 1/4 cup dehydrated corn 
  • 1/4 cup dehydrated bell peppers 
  • 2 tablespoons dehydrated onions 
  • 2 1/4 cups vegetable broth or water 
  • 1 tablespoon olive oil or butter 
  • 1 teaspoon garlic powder 
  • 1/2 teaspoon dried thyme or Italian seasoning 
  • Salt and pepper to taste 
  • Optional: grated Parmesan or a drizzle of hot sauce for serving 

Instructions

  1. Rehydrate the veggies: While it's not required, you can soak the dehydrated vegetables in warm water for 5–10 minutes to speed up cooking. Otherwise, they’ll rehydrate directly in the pot. 
  2. Sauté aromatics: In a medium pot, heat olive oil over medium heat. Add the dehydrated onions and sauté for 1–2 minutes until fragrant. 
  3. Combine everything: Add rice, all dehydrated vegetables, garlic powder, thyme and vegetable broth to the pot. Stir to combine. 
  4. Cook: Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes (white rice) or 35–40 minutes (brown rice), until rice is tender and the liquid is absorbed. 
  5. Fluff and serve: Let it rest for 5 minutes. Fluff with a fork, season with salt and pepper and garnish as desired. 

Tips & Variations

Add cooked chickpeas or plant-based protein to your meal. Use quinoa instead of rice for a protein-rich twist. Spice it up with curry powder, cumin or smoked paprika.
