International Coffee Day

Here's a delicious recipe for Pumpkin Coffee Brownies using dehydrated pumpkin dices and coffee. This recipe combines the richness of brownies with the earthy sweetness of pumpkin and the bold flavor of coffee: 

Pumpkin Coffee Brownies Recipe 

Ingredients 

  • 1 cup Harmony House dehydrated Organic Pumpkin Dices 
  • 1/2 cup brewed coffee (strong or espresso) 
  • 1/2 cup unsalted butter (melted) 
  • 1 cup sugar 
  • 2 large eggs 
  • 1 tsp vanilla extract 
  • 1/2 cup cocoa powder 
  • 3/4 cup all-purpose flour 
  • 1/2 tsp baking powder 
  • 1/4 tsp salt 
  • 1/2 cup chocolate chips (optional, for extra richness) 

Instructions 

Rehydrate the Pumpkin Dices

In a small bowl, combine 1 cup of dehydrated pumpkin dices with hot water. Let them soak for about 10–15 minutes until softened. Drain well and mash the pumpkin dices to create a smooth puree. Set aside. 

Preheat Oven

Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper. 

Prepare the Coffee

Brew a 1/2 cup of strong coffee or espresso and allow it to cool slightly. 

Mix the Wet Ingredients

In a large mixing bowl, whisk together the melted butter and sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract, brewed coffee, and the mashed pumpkin puree. Mix the Dry Ingredients: In a separate bowl, sift together the cocoa powder, flour, baking powder, and salt. 

Combine Wet and Dry Ingredients

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. 

If desired, fold in the chocolate chips for an extra rich flavor. 

Bake

Pour the brownie batter into the prepared baking pan, spreading it evenly. 

Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). 

Cool and Serve

Let the brownies cool in the pan for 10–15 minutes before transferring them to a wire rack to cool completely. Once cooled, cut into squares and enjoy! 

Notes 

The rehydrated pumpkin adds a subtle sweetness and moisture to the brownies, while the coffee intensifies the chocolate flavor. 

For a seasonal touch, sprinkle some cinnamon or pumpkin spice on top before baking.
