Ingredients
- 1/2 cup freeze-dried soybeans
- 1/2 cup dehydrated carrots
- 1/4 cup dehydrated red cabbage
- 1 cup hot water (for rehydration)
- 1 cup cooked brown rice or quinoa
- 1/2 avocado, sliced
- 1 tbsp sesame seeds
- 1 tbsp soy sauce or tamari
- 1 tsp sesame oil
- Optional: sliced green onions, sriracha or a drizzle of tahini
Instructions
Rehydrate the Soybeans, Carrots and Red Cabbage
In a bowl, cover freeze-dried soybeans, carrots and red cabbage with hot water. Drain any excess water once the vegetables are rehydrated.
Assemble the Bowl
Arrange rehydrated soybeans, carrots, cabbage and avocado on top of the cooked rice or quinoa.
Dress It Up
Drizzle with soy sauce and sesame oil. Sprinkle sesame seeds over the top and add any optional toppings.
