Tropical Granola
Ingredients
2 cups rolled oats
1/2 cup sliced almonds
1/2 cup shredded coconut
1/2 cup HHF freeze-dried pineapple dices
1/4 cup honey or maple syrup
1/4 cup coconut oil
1 tsp vanilla extract
1/2 tsp sea salt
Instructions
Preheat your oven to 300°F.
In a large bowl, combine the oats, almonds, and shredded coconut.
In a small saucepan over low heat, melt the coconut oil and honey (or maple syrup) together.
Stir in the vanilla extract and sea salt.
Pour the wet mixture over the dry ingredients and mix well.
Spread the mixture evenly on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, stirring halfway through, until golden brown.
Let cool completely, then mix in the freeze-dried pineapple dices.
Store in an airtight container.
Pineapple Coconut Muffins
Ingredients
1 1/2 cups all-purpose flour
1/2 cup sugar
1/2 tsp baking powder
1/2 tsp baking soda

1/2 cup shredded coconut

1/2 cup milk
1/3 cup vegetable oil
1 egg
1 tsp vanilla extract
Instructions
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, shredded coconut, and freeze-dried pineapple dices.
In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

1 cup rolled oats
1/2 cup almond butter
1/4 cup honey
1/2 cup shredded coconut

1/4 cup chia seeds
1/2 tsp vanilla extract
Instructions
In a large bowl, combine all the ingredients.
Mix well until everything is evenly distributed and the mixture holds together.
Roll the mixture into small balls, about 1 inch in diameter.
Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
