Spinach and Artichoke Dip
Ingredients
- 1 cup Harmony House Foods dehydrated spinach
- 1 (14-ounce) can artichoke hearts, drained and chopped
- 1 cup plain Greek yogurt (nonfat or low-fat)
- 1/2 cup part-skim ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
Rehydrate the Spinach
Place the dehydrated spinach in a bowl and cover with warm water to rehydrate it. Drain and squeeze out excess water.
Preheat the Oven
Set your oven to 375°F (190°C).
Combine the Ingredients
In a large mixing bowl, combine the rehydrated spinach, chopped artichoke hearts, Greek yogurt, ricotta cheese, Parmesan, garlic powder, onion powder and red pepper flakes if using. Mix well and season with salt and pepper to taste.
Transfer to a Baking Dish
Spread the mixture evenly in an oven-safe dish.
Bake the Dip
Bake for 20-25 minutes, or until heated through and the top begins to brown slightly.

- 1 cup plain Greek yogurt (nonfat or low-fat)

- 1/4 tsp dehydrated garlic
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- Salt to taste
- A splash of lemon juice (optional)
Instructions
Rehydrate the Vegetables
Place the dehydrated spinach and mixed vegetables in separate bowls. Cover each with warm water to rehydrate. Drain and gently squeeze out excess water.
Blend the Base
In a large mixing bowl, combine Greek yogurt, ricotta cheese, Parmesan cheese, garlic, onion powder, smoked paprika, black pepper, and a splash of lemon juice (if using). Mix until smooth.
