Dehydrated Black Bean & Sweet Corn Tacos
Ingredients
- 1 cup Dehydrated Black Beans
- 1/2 cup Freeze-Dried Sweet Corn
- 1/4 cup Dehydrated Diced Tomatoes
- 1/4 cup Dehydrated Onions
- Chili Boost seasoning (or chili powder, cumin, garlic, paprika)
- Corn tortillas, avocado, salsa, fresh lime
Instructions
Rehydrate the beans, corn, tomatoes and onions in hot water. In a skillet, cook the rehydrated mix with chili boost seasoning until heated through. Serve in warm corn tortillas. Top with avocado, salsa and a squeeze of lime!

Spicy Southwest Quinoa Salad
Ingredients
- 1 cup cooked quinoa
- 1/2 cup Freeze-Dried Green Peas
- 1/4 cup Dried Red & Green Bell Peppers
- 1/4 cup Dehydrated Carrots
- 1/4 cup Black Beans (rehydrated)
- Olive oil, lime juice, cumin, salt, fresh cilantro
Instructions
Rehydrate veggies and beans while quinoa cooks. Toss everything in a large bowl with olive oil, lime juice and spices. Chill and serve topped with cilantro.

Creamy Vegan Enchilada Casserole
Ingredients
- 1 cup Harmony House Dehydrated Pinto Bean Flakes
- 1/2 cup Harmony House Tomato Powder
- 1/4 cup Harmony House Dehydrated Onion
- Corn tortillas
- Vegan cheese (optional)
- Cumin, garlic powder, chili powder
Instructions
Mix rehydrated beans, tomato powder (with water), onions and spices into a saucy filling. In a baking dish, layer tortillas and filling like a lasagna. Top with extra sauce and vegan cheese. Bake at 375°F for 20 minutes.
Tip: Top with fresh avocado and chopped green onion before serving.
