Apple & Sweet Potato Baked Donuts
These donuts are gently sweet, spiced just right and packed with real fruit flavor. The sweet potato adds moisture and richness, while the apples offer subtle tartness and natural sweetness.
Ingredients
For the donuts:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg (optional)
- 1/4 tsp salt
- 1/2 cup milk (dairy or plant-based)
- 1 egg
- 2 tbsp oil (coconut or avocado)
- 1/2 tsp vanilla extract
- 1/3 cup dehydrated sweet potatoes, rehydrated and puréed
- 1/4 cup freeze-dried apple dices, rehydrated
Optional Maple Glaze:
- 1 cup powdered sugar
- 2 tbsp maple syrup
- 1–2 tbsp milk
- Pinch of cinnamon
Instructions
For the donuts:
- Preheat oven to 350°F (175°C).
- Lightly grease a donut pan.
- In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt.
- In another bowl, combine milk, egg, oil, vanilla and sweet potato purée. Mix well until smooth.
- Fold the wet mixture into the dry ingredients. Stir until just combined.
- Gently fold in the crushed or chopped apples.
- Spoon batter into your donut pan, filling each cavity about 3/4 full.
- Bake for 12–15 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack.
For the glaze:
- Whisk together powdered sugar, maple syrup, milk and cinnamon.
- Dip cooled donuts in the glaze and allow to set.
Make It Your Own!
- Add freeze-dried peach dices or a handful of chopped pecans for a Southern twist.
- Sprinkle the donuts with a little cinnamon-sugar before baking for extra texture.
- Try a vegan version with a flax egg and plant-based milk.
