Celebrating the First Day of Summer

Summer Vegetable Quinoa Salad

  • 1 cup quinoa 
  • 2 cups water 
  • 1/2 cup Harmony House Dehydrated Mixed Vegetables 
  • 1/4 cup Harmony House Freeze-Dried Green Peas 
  • 1/4 cup Harmony House Freeze-Dried Sweet Corn 
  • 1/4 cup Harmony House Freeze-Dried Mixed Bell Peppers 
  • 2 tablespoons olive oil 
  • 1 tablespoon lemon juice 
  • Salt and pepper to taste 
  • Fresh herbs (parsley, cilantro, or basil) for garnish 


  • Rinse the quinoa under cold water. 
  • In a medium saucepan, bring 2 cups of water to a boil. 
  • Add the quinoa, reduce heat to low, and simmer for 15 minutes or until water is absorbed. 
  • In a bowl, rehydrate the Harmony House Mixed Vegetables, Green Peas, Sweet Corn, and Bell Peppers by covering them with hot water. Let them sit for 10 minutes, then drain. 
  • Fluff the cooked quinoa with a fork and let it cool to room temperature. 
  • In a large mixing bowl, combine the quinoa with the rehydrated vegetables. 
  • Drizzle olive oil and lemon juice over the salad, and toss to combine. Season with salt and pepper. 
  • Garnish with fresh herbs and serve chilled or at room temperature. 

Hearty Summer Soup 

Even on warm days, a light and hearty soup can be incredibly satisfying. This recipe uses a variety of Harmony House dehydrated vegetables and beans to create a flavorful, nutrient-dense meal. 


  • 1/2 cup Harmony House Dehydrated Vegetable Soup Mix 
  • 1/4 cup Harmony House Dehydrated Lentils 
  • 4 cups vegetable broth 
  • 1 teaspoon dried thyme 
  • 1 teaspoon dried oregano 
  • Salt and pepper to taste 


  • In a large pot, bring the vegetable broth to a boil. 
  • Add the Harmony House Vegetable Soup Mix and Lentils to the pot. 
  • Reduce the heat and let it simmer for about 30 minutes, or until the lentils are tender. 
  • Season with thyme, oregano, salt, and pepper. 
  • Serve hot with a slice of crusty bread. 

Tropical Fruit Parfait 

End your summer meal on a sweet note with this easy-to-make tropical fruit parfait. Using Harmony House freeze-dried fruits, you can create a delicious and refreshing dessert in no time. 


  • 1/2 cup Harmony House Freeze-Dried Tropical Fruit Medley (includes a quart each of bananas, pineapple, mango and papaya)
  • 1 cup Greek yogurt 
  • 1 tablespoon honey or maple syrup 
  • Granola for topping 
  • Fresh mint leaves for garnish 


  • In a bowl, rehydrate the Harmony House Tropical Fruit Medley by covering it with cold water. Let it sit for 5 minutes, then drain. 
  • In a small bowl, mix the Greek yogurt with honey or maple syrup. 
  • In serving glasses or bowls, layer the yogurt mixture with the rehydrated tropical fruit. 
  • Top with granola and garnish with fresh mint leaves. 
  • Serve immediately for a refreshing summer dessert.
