Dried Butternut Squash

Not as good as the onions and peppers. I will have to add to a soup and see if that’s what it needs. I hit a hard piece almost rock like but may have been a stem. No damage done though . Reconstituted with water and seasoned with salt and butter. I migjt be doing something wrong too.

I used to use canned pumpkin to cream my morning oats in place of more calorie-dense options. Don't knock it until you try it. Moving off-grid with no refrigerator, I needed to find a new option for that need. I add 2 T of the butternut squash to a tiny saucepan of water before bed. In the morning, cook it with oats, goji berries, cranberries, and pumpkin pie spice. Topped with flax meal, diced apple, and cinnamon, this meal is filling, low-cal, and yummy. While the HH dehydrated butternut squash doesn't taste exactly like canned pumpkin, it still gives that creamy texture and lots of nutrition. I won't purchase the canned stuff anymore. Besides the savings in electricity (to store the open pumpkin puree until it's eaten up) and space (to store bulky cans), I won't have the problem of disposing of so many cans, a huge plus for people who must haul their own trash.
